A lobster pick or seafood fork is a long, narrow food utensil. It is used to extract meat from joints, legs, claws, and other small parts of crabs or lobster. These picks or  stainless steel seafood forks weigh as much as an average teaspoon. These forks come in a four fork set.

They have a long, textured cylindrical handle, ending in a crescent-shaped moderately sharp pick, or else a small two-tined fork. A three-tined version has a longer central tine with two shorter side tines with hooks on them. The other end has a spoon for scooping out meat from inside the shell. The lobster pick can also be used with other seafood, such as crab and crawfish.

Usage:

While using the fork, the lobster shell has to be secured in another hand, so these utensils cannot be used in formal dining, where only breads, cheese (and sometimes fruits) can be touched by fingers. Hold the small claws like straws to suck out the meat and juice. You will be provided in most cases with a seafood fork, a lobster pick (nut pick), a dinner fork and a table knife. The tiny seafood fork is not used to eat lobster; it is used to extract the lobster meat from the claws.

 

The polished lobster fork is a festive and indispensable tool when serving seafood. The tiny tines on the head of the fork are ideal for prying the meat from the shell. The spoon on the opposite end tackles the meat in larger claws. A snail fork is intended for use when eating snails from the shell or from a snail dish. Some manufacturers use the term “escargot fork” instead of snail fork. It is sometimes confused with a cocktail fork, and a cocktail fork is occasionally used in place of a snail fork. These stainless steel seafood forks work equally well with escargot.
