There’s nothing as flavorful as fried food, and the culprit here is the actual oil itself. Oil is fat. And fat is very tasty. Regardless of whether you are using sunflower, olive, sesame, peanut, or vegetable oil, any of these oils will directly impact the distinct flavor of your fried food.


Batters are made by combining some sort of flour—usually wheat flour, though cornstarch and rice flour are not uncommon. Other ingredients include a liquid and optional leavening or binding ingredients, like eggs and baking powder. They coat foods in a thick, goopy layer. Rice flour and cornstarch work particularly well because they fry up crispier than wheat flour. They also absorb less moisture and fat during the frying process, making the products less greasy. This is why rice flour is often used when making tempura because it produces a very thin and crispy, dry crust.

Cooking Temperature:

Most deep frying starts with oil between 325 and 375 degrees, but the temperature drops when food is added. Once the oil recovers some heat, it should remain somewhere between 250 and 325 degrees (depending on your recipe) for the duration of cooking.
