A tailgate party is a social event where people gather in or around the open tailgate of a vehicle. There they eat, drink, and play games. Needless to say, tailgating in full effect is what unapologetic sports fans are used to. Whatever foods you like are appropriate for tailgating. These parties are all about getting together with friends over good food. Uncooked, pre-prepared, raw, or food requiring warming up are the rule. Typically, tailgates revolve around grilling up delicious food like burgers and hot dogs, mixing up refreshing drinks, and engaging in fun pre-game activities. It’s as much about the social experience as it is about preparing for the game.

Kebabs Are The International Food

While the 'kebab' version is typically used in areas that are Arabic speaking, such as Lebanon and Syria. 'Kebob' is more typically used in countries such as Iran and Armenia. The truth is, they're used interchangeably quite often, and there's no right or wrong way to put the “bob” in shish kabob. With this in mind, we can call kebabs the international food.

Kebabs consist of cut up or ground meat, sometimes with vegetables and various other accompaniments according to the specific recipe. Although kebabs are typically cooked on a skewer over a fire. Some kebab dishes are oven-baked in a pan. They are also prepared as a stew such as tas kebab. The traditional meat for kebabs is most often lamb meat, but regional recipes may include beef, goat, chicken, fish, or even pork (depending on whether or not there are specific religious prohibitions).

Traditional kebabs can consist of fish, lamb, or beef meat then grilled on skewers with vegetables and/or fruit. They may also be grilled without skewers or prepared in a pan on the stove or in the oven. Skewers made with metal or bamboo are the most widely used. Selection is based on whether you plan to dispose of (bamboo) or reuse (metal) skewers. When we host family and friends, we typically use bamboo where they can be tossed out after use. There is no noticeable difference in taste.

In the early says of the wild west, food was cooked over an open flame using whatever was available. Native Americans cooked food over wooden spits so essentially you can say kebabs have been everywhere in the world all the time.

Basting Fish and Shellfish while Grilling

Some more succulent eating is done when basting fish and shellfish grilling. If you like to grill vegetables, fish, or other foods prone to breaking apart a grill basket is an awesome value. Baskets keep food contained while still letting it rest atop the grill and get nicely charred and smoky. Grill baskets are high-sided perforated metal pans that let the smoky flavor and heat in. Baskets are all about preventing small foods from falling through the grates into the flames below and provide even cooking.

You do not need a grilling basket to grill your vegetables but a grilling basket is handy in that it will help prevent you from losing any of your smaller veggies through the grates - skewering them helps but if you have a grilling basket feel free to grill your smaller veggies in it. Put the vegetables in a grilling basket or, if broiling, transfer the vegetables to the prepared baking sheet. Grill or broil, 4 inches from the heat, turning once, until the vegetables are cooked through and lightly charred, about 20 minutes. If you're cooking small or delicate vegetables, anything sliced smaller than three-quarters of an inch, keep the cover open. If the vegetables are thicker, you'll want to close the lid to help them cook through.

Grilling baskets also work well for burgers. I've had the experience of making turkey burgers over an open flame. The meat, beef and turkey, are delicate and can fall apart ruining the experience. There's nothing like a flame grilled burger so baskets are more than an outstanding addition to your outdoor kitchen

Fish and Shellfish Grilling Cooking Time

Starting off, we recommend cooking fish 4-5 minutes on each time max. Cooking time also depends on the thickness of the fish. Per inch of fish, the general rule is to allow 8-10 minutes of grill time. So, if your fish is two inches in thickness, grill each side for about six to eight minutes. But its always a good idea to check the instructions on your recipe. Shellfish should be cooked 4-5 minutes per side as well. Using shrimp as an example, if using large shrimp the 4-5 minute mark should suffice. Anything smaller we recommend watching it to determine the best duration. When basting, you're going to most likely cook the food with an open top so watch it closely so that you can remove the food should a flame develop.
